Great Guacamole: the Recipe

I’m not really sure when my love for guacamole came about. I don’t ever remember eating avocados as a kid.  But sometime early in my marriage I started making it, often, and it’s become a staple. We currently make and eat guacamole at least once a week and its a favorite for our whole family!  I’m going to share the easy, fresh guacamole recipe that we have concocted as our favorite version!

As much as we love it,  we rarely order it at a restaurant.  On the few occasions we have, my husband always ends up exclaiming, “your guacamole is so much better.” And when I make it at home I almost always here “this is by far the best guacamole.”  I really like it as well, but his statements could just be part of his husbandly duty: thou shall praise thy wife’s cooking…. if you ever wish to eat again! But, I CAN say when we take it to a party or family get together, it’s a rare occasion to have leftovers. Which, is always a good sign!

Great Guacamole:

  • 2 ripe avocados
  • 1 tablespoon lime juice (I prefer real-not from concentrate)
  • 1/2 teaspoon cumin
  • 1/4-1/2 teaspoon garlic powder (depending on how much you like garlic)
  • 1/4-1/2 teaspoon salt (I use the coarse pink Himalayan)

Cut the avocados in 1/2, remove the seed and spoon the flesh out into a bowl.  Mash with a fork.  This should be easy.  If it’s not, your avocados aren’t ripe enough.  Add the other ingredients and stir together.

Optional additions: fresh chopped cilantro, finely chopped onions, finely chopped cherry tomatoes, cayenne pepper. These are all based on personal taste and dependent on whether you like it really creamy or with some extra forage in the mix! I often add the cayenne when I’m making it for myself.

Full disclosure: I am a dash/dump/pour cook.  I rarely measure anything. I measured while making it the other night to prepare a defined recipe for you all.  So if you are comfortable with it, just estimate with the lime, cumin, garlic powder and salt, it doesn’t have to be precise!  It’s so rewarding to cook with your senses.  Taste and smell go a long way in the kitchen!

Fresh is Best

The two avocado recipe is the amount we make for our family of four. I usually triple this for a party or get together.  I never make more than will be eaten in one sitting as it oxidizes quickly in the fridge.  There are all these tips out there for keeping your guac green when you store it (leave an avocado seed in the guac or use lemon and lime juice) the lime juice does work but the amount you use to keep it from turning brown, in my opinion, ruins the flavor.  Plus it just tastes best fresh!

We enjoy this dish so much!  It can be eaten plain, on chips or added as a topping on burgers or nachos.  It’s a really savory and tasty way to add some flavor to your meal while also amping up the nutritional content!

    Sooooo good Rita! I left out the lime juice (because I forgot to pick some up at the store!) and added diced red onion instead. So delicious!
